Spelt is the oldest cereal known to mankind. It is valued not only for the fact that it has escaped the close attention of civilization and "improvements" by botanists and agronomists. What makes this cereal special and unique is its composition.
Compared with classic wheat, spelt contains more iron, which has a beneficial effect on the circulatory system, and vitamins of group B. Silicic acid, which is also part of the grain crop, has a healing effect on nails, hair and human skin, improves brain function. Spelt contains selenium, vitamins A, E, D, copper, zinc and amino acids that reduce cholesterol levels in the blood and improve digestion. Micropolysaccharides strengthen the human immune system.
Protein in this culture is contained in a larger volume than in other cereals, and consists of fourteen essential amino acids. Among them is tryptophan: the most important element for a good mood and a strong nervous system. It is tryptophan that "converts" serotonin into the happiness hormone. Its deficiency is a common cause of the development of depressive disorders, insomnia and digestive problems.
Carbohydrates in spelt are slow. In the body, they are broken down and absorbed gradually, without causing a sharp jump in blood sugar. Spelt pastries are not only satisfying and nutritious, but also gentle for the figure.
