Description
Black cardamom (A. subulatum)(Cardamom) is a tall plant of the family Zingiberaceae (Ginger). The part of the plant used is fruits. Usually Black cardamom is large (up to 3 cm), brown pods that are sold whole. The culinary value here is represented by the seeds inside the pod of the plant and the fragrant resinous contents of the pod of this cardamom. The smoky aroma of pure spice is not noticeable in the finished dish; black cardamom cannot dominate the dish, but increases and enhances the taste of other components. The taste of this spice is sweet-camphor with a chill. Thanks to the easily noticeable shade of camphor, Black cardamom acquires a new and unique taste and smell. Due to the fact that Black cardamom seeds are traditionally dried over an open fire, this spice also acquires a strong smoky aroma. Black cardamom is ideal in meat sauces and gravies, heavy dishes of long cooking, with beef pork, cabbage, and others.
